Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 pound Semi-sweet chocolate
1 cup Vanilla ice cream, softened
½ teaspoon Vanilla or grated orange peel
1 cup Natural American pistachios, chopped
In 1 quart microwave-safe container melt chocolate at MEDIUM (50%) 4 minutes; stir after 3 minutes. Add ice cream and beat with electric mixer until smooth. Stir in vanilla. Refrigerate 1 hour. Shape into 1 inch balls; roll in pistachios. Chill until ready to serve.
