Prost! to Pistachios and Pints!

Sea Salt and Pepper Pistachios

Serves 4

Ingredients
1 pound whole American pistachios in-shell
¼ ounce finely ground white peppercorns
¼ ounce finely ground black peppercorns
4 tablespoons canola oil
Sea salt to taste

Instructions
Place canola oil in a large skillet and heat until warm. Add pistachios and toast over medium-low heat. Add finely ground white and black peppercorns; toast and evenly coat pistachios. Season with sea salt to taste. Remove and serve immediately.

American Pistachio Nuts with Texas Pete Hot Sauce

Yield: One pound of snacking nuts

Ingredients
1 pound American pistachios, in-shell
3 tablespoons Texas Pete hot sauce
4 tablespoons canola oil
Sea salt to taste

Instructions
Warm canola oil in roasting pan or wok on your stove-top; add pistachios and lightly toast. Add Texas Pete hot sauce, coating the pistachios evenly; season with sea salt to taste. Remove from pan and serve hot in the vessel of your choice.

Sea Salt and Vinegar Pistachios

Serves 4

Ingredients
16 ounces American pistachios, in-shell,
1 teaspoon fine sea salt
4 ounces organic vegetable oil
2 ounces American white vinegar
1 ounce sliced dill sprigs
1 teaspoon cracked black peppercorns
2 teaspoons coarse sea salt

Instructions
Toss pistachios with the fine sea salt, oil, vinegar, dill and cracked black pepper. Allow to sit for 25 to 30 minutes to marinate. Bake in a hot oven until slightly crispy. Remove from the heat and toss with the coarse sea salt. Allow to cool before serving.

Combined Tasting Notes This classic bar snack combination of sharp vinegar and saltiness is perfectly complimented by the light, golden lager style beer. Mild hops add a slight sweetness, which contrasts perfectly to the pistachio’s creamy texture and taste.

Curried Pistachios

Serves 4

Ingredients
½ pound American raw pistachios, shelled
1 ½ tablespoon Madras curry powder
¾ teaspoon ground cumin
¾ teaspoon ground anise
½ chili powder
1 tablespoon water
¾ teaspoon cornstarch
Peanut oil (for frying)
Sea salt to taste

Instructions
In a large bowl, combine pistachios, curry powder, cumin, anise and chili powder, Toss to coat well. In a separate small bowl, combine water and cornstarch. Add pistachios and toss to coat well. Let stand for 2 hours. In fryer or deep saucepan, heat peanut oil to 375˚F. Fry pistachios 4 to 5 minutes or until golden brown. With slotted spoon, remove onto paper towels to drain. Immediately sprinkle pistachios with salt to taste. Cool completely.

American Pistachios with Teriyaki and Dijon Mustard

Yield: One-pound snacking nuts.

Ingredients
1 pound American Pistachios, in-shell
6 tablespoons teriyaki sauce
2 tablespoons Dijon mustard
2 tablespoons canola oil
Sea salt to taste

Instructions
Warm the canola oil in the pan or wok on your stove-top; add the pistachios and lightly toast. Add the teriyaki sauce and Dijon mustard, coating the pistachios evenly. Season with sea salt to taste. Remove from heat; serve hot in the vessel of your choice.

Pistachioritas

Yield: Two pounds snacking nuts

Ingredients
2 pounds pistachios, in-shell
½ cup fresh lime juice
½ cup granulated sugar
4 Large chipotle chiles canned in adobo: approximately 3 ounces
2 tablespoons adobo sauce: from the canned Chipotle Chiles
6 tablespoons Silver Tequila
½ teaspoon Salt
Lime wedges

Instructions
Combine the lime juice, sugar, chipotle, adobo sauce, tequila and salt in a blender. Puree until smooth.
Place the shell-on pistachios nuts in a mixing bowl. Add the sauce and toss or stir until the sauce is fully incorporated into the nuts. Transfer the pistachio nuts to a sheet pan. Pre-heat an oven to 350°F. Toast the pistachio nuts for 5 to 10 minutes or until the nuts are nicely browned. Remove from the oven and cool to room temperature. To serve, place the pistachio nuts in a serving bowl. Sprinkle the nuts with salt and garnish with lime wedges.
