Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1/2 cup Finely chopped, natural American pistachios
2 tablespoons Honey
1/2 teaspoon Lemon juice
1/4 teaspoon Ground cinnamon
Dash ground cloves
1/2 package Frozen puff pastry sheets, thawed
2 tablespoons Melted butter or margarine
Combine pistachios, honey, lemon juice, cinnamon and cloves. Unfold puff pastry; roll 1/8-inch thick into 12-inch square. Cut pastry in half; brush with melted butter. Spread pistachio filling over 1/2 of each pastry lengthwise; fold half of pastry over filling, press down. Using sharp knife, cut into 3 x 3/4 strips. Twist strips; place on baking sheet. Bake at 350°F. for 15 - 20 minutes or until lightly browned.
