Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
2 cups roasted, unsalted pistachio kernels
1/4 cups confectioners' sugar
Preheat oven to 350˚F (175˚C). Spread the pistachio kernels on a rimmed baking sheet and toast in the oven for 4 minutes. Remove from the oven and allow to cool. In a food processor, pulse the pistachios and sugar until you have a powder (not a paste). Place in a bowl and eat with a spoon or from the palms of your hands.
