Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 pound Fresh mushrooms, finely chopped
1\2 cup Chopped onion
2 tablespoons Butter
2\3 cup Dry white wine, divided
1 teaspoon Marjoram, crushed
Dash hot pepper sauce
Salt and pepper to taste
1 cup Shredded Jarlsberg cheese
7-1\2 ounces Alaska salmon, drained and flaked
2 cups Chopped, natural American pistachios
15-20 Squash blossoms
Sauté mushrooms and onions in butter; stir in 1\2 cup wine and marjoram and cook about 10-15 minutes or until liquid is evaporated. Add hot pepper sauce, salt and pepper; cool. Combine mushroom mixture, cheese and salmon in food processor and process until smooth. Stir in pistachios. Stuff mixture into blossoms; arrange in baking dish. Baste with remaining white wine. Cover with foil; bake at 350°F., 15 minutes.
