Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 tablespoon Each vegetable oil and vinegar
1 teaspoon Honey
1/4 teaspoon Grated orange peel
3 tablespoons Chopped, natural American pistachios
10 cups (Approximately 1 pound) fresh spinach leaves**
2 Green onions (tops only), blanched
Blend oil, vinegar, honey and orange peel; stir in pistachios and set aside. Place spinach in 2-quart microwave-safe container; cover with plastic wrap and vent. Micro-cook at HIGH (100%) 3 to 5 minutes or until spinach is wilted. Rinse with cold water; squeeze to drain. Divide into 4 bundles. Wrap each bundle with green onion tie. Drizzle with pistachio dressing.
