Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
¼ cup Chopped onion
2 tablespoons Butter or margarine
2 teaspoons Lemon juice
¼ to ½ teaspoon each Oregano and thyme, crushed
Salt and pepper
¾ pound Sliced mushrooms*
1/3 cup Chopped natural American pistachios
Sauté onion in butter until tender. Add lemon juice, oregano, thyme, salt and pepper to taste; stir to blend. Add mushrooms and pistachios; toss and cook about 5 minutes or until mushrooms are thoroughly heated. Garnish with chopped parsley.
