Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
2 large Cloves garlic
1/2 teaspoon Black pepper, finely ground if possible
1/4 cup Olive oil
1 pound Medium shrimp, shelled and deveined
3/4 cup Shelled natural American pistachios, finely chopped
Chop garlic in food processor, slowly add pepper and olive oil. Pour oil mixture over clean, deveined, raw shrimp. Sauté in large skillet until shrimp have turned pink. Serve hot.
