Pistachio Prawns

Ingredients: 

1/2 cup Whole shelled natural American pistachios
1/2 cup Olive oil
2 tablespoons Grated Parmesan cheese
2 large or 4 medium Cloves garlic
2 teaspoons Dried basil
1 pound Prawns (medium sized - 25 to 35), peeled

Instructions: 

In food processor or blender, process pistachios with olive oil, Parmesan cheese, garlic and basil. Thread each shrimp onto long bamboo skewer from tail to (but not directly through) wide end. Pour pistachio sauce onto plate with edge. Roll prawns in sauce and place in shallow baking pan. Bake uncovered at 400° for 6 minutes, or until just cooked through but still moist looking inside (make a small cut with knife to check).
