Pistachio Lemon Loaf

1 loaf.

¼ cup Butter or margarine
¾ cup Sugar
2 Eggs
1 tablespoon Grated lemon peel
2 cups All purpose flour
2 teaspoons Baking powder
¼ teaspoon Salt
¾ cup Milk
¾ cup Chopped, shelled American pistachios, divided
Lemon Glaze (recipe follows)

Lemon Glaze: Combine 2 tablespoons lemon juice and 1 cup powdered sugar.


Cream butter and sugar. Add eggs and lemon peel; beat until light and fluffy. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk. Fold in ½ cup pistachios. Spoon batter into a greased 8 ½ x 4 ½ x 2 ½ inch loaf pan. Bake at 350° F. 50 to 60 minutes until a pick inserted in the center comes out clean. Cool 10 minutes in pan. Turn out onto wire rack. Spoon Lemon Glaze over top and sprinkle with remaining pistachios.
