Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 cup Butter or margarine, softened
3/4 cup Sugar
2 tablespoons Brandy
1 ounce Unsweetened chocolate, grated
2 cups Flour
1-1/2 cups Whole shelled natural pistachios, finely chopped
Cream butter with sugar. Beat in brandy and chocolate. Mix in flour and 1 cup pistachios. Shape into 1-inch balls. Dip each ball into some of remaining 1/2 cup pistachios. Place on cookie sheet and bake at 325° F. for 10 minutes.
