Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 cup Grated Cheddar cheese
1/2 cup Butter or margarine
1 package Cream cheese, cut into cubes
1-1/2 tablespoons Chopped fresh oregano or thyme
1-1/2 teaspoons Dried tarragon or 1 tablespoon fresh chopped tarragon
3 Egg whites, whipped until stiff peaks form
2/3 cup Finely chopped, natural American pistachios
1 Thin, narrow French bread baguette, sliced
1/4 to 1/3-inch thick
Combine Cheddar with butter and cream cheese in saucepan; stir over low heat until melted and smooth. Stir in herbs. Fold in egg whites. Set aside 1/4 cup of the pistachios. Fold remainder into cheese mixture. Spoon mixture onto bread slices, a rounded teaspoon on each. Sprinkle with remaining pistachios. Place on baking sheet and bake at 375° F. for 8 to 10 minutes or until golden brown and hot. Serve immediately.
