Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 whole Chicken breast, skinned and boned
1/3 cup Flour
¼ teaspoon Salt
1/8 teaspoon Pepper
1 Egg, beaten
1 tablespoon Milk
2/3 cup Finely chopped natural American pistachios
3 tablespoons Butter or margarine
1 tablespoon Lime juice
Cut chicken into several pieces. Combine flour, salt and pepper; roll chicken in seasoned flour. Combine egg and milk. Dip floured chicken into egg mixture. Roll in pistachios; chill for 1 hour. Melt butter and lime juice in shallow baking pan. Place chicken in pan; turn once to coat with butter. Bake at 350º F for 10 minutes or until tender and lightly browned.
