1 small Pink grapefruit, peeled and sectioned
1 medium Orange, peeled and sectioned
1 cup Jicama, pared and cubed
1 Each red and yellow peppers, seeded and thinly sliced into rings
2 to 3 ounces Jarlsberg or Swiss cheese, sliced
¼ cup Natural American pistachios, coarsely chopped
Arrange grapefruit, orange, jicama, peppers, cheese and pistachios in lettuce cup on individual serving plates. Drizzle with Pistachio Dressing.
