Pistachio Butter Sauce

Approximately ¾ cup sauce.

¼ cup Chopped green onion
2 tablespoons Water
1 tablespoon Vinegar
1/8 teaspoon Pepper
¾ cup Cold butter, cut into cubes
1/3 cup Coarsely chopped American pistachios
1 tablespoon Minced parsley
1-1/2 teaspoons Lime juice


Combine onion, water, vinegar and pepper in saucepan. Bring to boil; boil gently until volume is reduced by half. Add about ¼ cup butter to sauce; beat vigorously with whisk over medium heat. Do not boil. Continue adding butter and beating until just melted. Add pistachios, parsley and lime juice. Beat again.
