Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1/2 cup Natural American pistachios
1 tablespoon Honey
1/2 teaspoon Grated lime peel
1 tablespoon Lime juice
1/4 cup Golden raisins
6 (8 ounces) Apples
Combine all ingredients except apples in food processor; process until blended to a paste or butter. Slice apples into 10 wedges; spread each wedge with 1/3 teaspoon of butter.
Note: If desired, use an electric blender to prepare butter: First whir pistachios, pulsing on and off at 3-second intervals, until ground. Add honey, lime peel and juice, and raisins and whir on-and-off fashion until blended.
