Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 can Chopped clams
3 tablespoons Each butter, melted, and flour
1 small clove Garlic, minced
1 cup Milk
2 tablespoons Each dry white wine and grated Parmesan cheese
¾ cup Natural American pistachios, chopped, divided
1 small Tomato, chopped
8 ounces Curly pasta, cooked and drained
Salt and white pepper
Drain clams; reserve ½ cup liquid. In microwave-safe 4-cup container combine butter, flour and garlic; microcook, covered, at HIGH 30 seconds. Stir in reserved clam liquid, milk, salt and pepper to taste. Microcook, covered, at HIGH 3 to 3-1/2 minutes or until thickened. Stir in clams, wine and cheese; microcook, covered, at HIGH one minute. Add ½ cup pistachios and tomato. Toss with pasta; sprinkle remaining pistachios over top.
