Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
2 tablespoons Vegetable or peanut oil
2 tablespoons Flour
1 cup Non-fat milk
1 tablespoon Grated orange peel
¼ teaspoon Salt
1/8 teaspoon Ground ginger
Few dashes of Tabasco sauce
¼ cup Orange juice
1/3 cup Coarsely chopped, roasted American pistachios
Blend oil and flour in saucepan. Gradually stir in milk, add orange peel, salt, ginger, and Tabasco sauce, and cook, stirring with wire whip, until mixture comes to full boil. Boil gently for one minute until thickened. Gradually stir in orange juice. Add pistachios.
