Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
¼ cup Sugar
1 ½ teaspoons Cornstarch
½ cup Orange juice
1 tablespoon Grated orange peel
1 Egg, beaten
½ cup Whipped cream or topping
2 tablespoons Natural American pistachios, coarsely chopped
4 cups Cubed assorted fruit
Combine sugar, cornstarch and salt. Add orange juice and peel. Cook and stir over medium heat until thickened. Stir some of hot sauce into egg; return to mixture in pan. Cook 1 minute longer. Cool. Fold in whipped cream and pistachios. Serve over assorted fruit. Garnish with additional pistachios if desired.
