Meatballs with Goat Cheese Cream

Yield: 4 Servings


1 small onion, finely chopped
¾ cup American pistachios, shelled and chopped coarsely
¾ lb. minced beef
1 egg
1 tsp medium hot mustard
Salt, freshly pepper (ground)
2 tablespoons vegetable oil
1 clove of garlic, crushed
¼ lb. goat cheese log
½ cup sour cream
Some chopped mint leaves


Combine the egg and mustard. Mix the minced beef with onion, half of the American pistachios, egg and mustard mix; season with salt and pepper and form the dough into 16 small balls. Fry the meatballs in hot oil about 8-10 minutes.

Cut goat cheese into small pieces; mix it with sour cream, mint, garlic and remaining American pistachios and season with salt and pepper.

Serve cream cheese with meatballs and vegetables and grissini, as desired, on a plate.
