Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
2 tablespoons Non-fat milk
2 tablespoons Tarragon Vinegar
1 cup Cholesterol-free, reduced calorie mayonnaise
¼ cup Coarsely chopped onion
½ teaspoon Dry tarragon
1/8 teaspoon White pepper
1/3 cup Coarsely chopped, roasted American pistachios
Pour milk and vinegar into electric blender. Add mayonnaise, onion, tarragon, and pepper. Whip until blended. Stir in pistachios. Serve chilled with steamed vegetables.
