2 - 8 ounce packages Light cream cheese
1 cup Nonfat or low fat ricotta cheese
1 tablespoon Grated lemon peel
1 tablespoon Lemon juice
2 tablespoons Minced fresh basil or 2 teaspoons dried basil
1/4 cup Whole shelled natural American pistachios, finely chopped
Beat cream cheese with ricotta, lemon peel and juice, basil and pistachios. Complete any of the variations below:
Cheese Ball: Chill mixture until it firms, shape into dome on appetizer tray. Press 1/4 cup additional finely chopped pistachios onto outside.
