1 ½ pounds Leeks, cleaned and trimmed
Salted water, chicken broth or combination of both
Pistachio Vinaigrette Sauce
Cut leeks in half lengthwise, if necessary. Place leeks in salted water to cover; bring to boil. Simmer, partially covered, 8 to 10 minutes or until barely tender; drain. Pour Pistachio Vinaigrette Sauce over warm leeks in glass dish. Let stand ½ hour. Serve warm or chilled.
