Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 cup Natural American pistachios
2 tablespoons Butter or margarine
1/8 teaspoon each Thyme and oregano, crushed
1 tablespoon Minced parsley
Melt butter in skillet. Add herbs and pistachios; toss to coat. Sauté about 5 minutes or until pistachios are coated and crisp. Cool on paper towels.
