Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
¾ cup Butter or margarine
½ cup Sugar
2 cups Flour
2 ½ tablespoons Instant espresso coffee granules
2 ounces Semi-sweet chocolate, melted
¾ cup Natural American pistachios, finely chopped
Beat butter with sugar until blended. Add flour, espresso granules, egg and melted chocolate, beating until smooth. Stir in pistachios. Shape into 1 inch balls; place on baking sheet and bake at 350 degrees F. for 8 minutes or until baked through. Cookies should feel dry to the touch. Transfer to wire racks to cool. Decorate partially cooled cookies with powdered sugar or chocolate.
