Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 cup Sugar
1/2 cup Butter or margarine, softened
1 teaspoon Vanilla
1 1/2 cups Flour
1/4 cup Cocoa
1/8 teaspoon Salt
3/4 cup Chopped natural American pistachios
Cream sugar and butter. Add egg and vanilla; beat until light. Blend in flour, cocoa and salt. Stir in pistachios; mix well. Shape dough into 10-inch long roll, 2-inches in diameter. Wrap and chill overnight. Cut into 1/4-inch slices; place on ungreased cookie sheets. Bake at 400° F., 8 to 10 minutes until edges are firm.
