Chocolate Brownie with American Pistachio (Vegan Recipe)

Ingredients: 

1 ¼ cup all-purpose flour
¼ cup brown sugar, packed
4 tablespoons fresh yeast
½ cup unsweetened cocoa powder
½ cup chopped pistachios Americans (by hand or with a mincer)
¼ cup chopped American pistachios for garnish
¼ cup extra virgin olive oil
¾ cup mineral water
1 tablespoon white vinegar
½ pound ripe banana

Instructions: 

Preheat oven to 350° F

With a fork or in a blender puree the bananas. In a bowl, mix all dry ingredients: flour, sugar, baking powder, cocoa and ½ cup chopped pistachios; mix well. Add the pureed bananas, oil, water and vinegar to this mixture. Mix well until all the ingredients are blended. Transfer the mixture into an 8-inch square pan and bake 15 minutes at 350° F. Let it cool on a rack. When completely cooled, cut into cubes.

Melt an ounce of chocolate in the microwave; glaze the cubes and sprinkle with the chopped ¼ cup of pistachios.
