Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1/2 cup Butter
2/3 cup Vermicelli, broken into 1" pieces
1 1/2 cup Bulgur
1/2 cup Unsalted pistachios, coarsely chopped
4 cups Chicken broth
Salt and pepper
Melt butter in a 4-quart pot. Add vermicelli and stir constantly until brown. Add bulgur and sauté 2-3 minutes, stirring constantly. Set aside for 5 minutes. Season chicken broth with salt and pepper to taste; bring to a boil. Add broth to sautéed mixture and simmer for 20-25 minutes or until rice or bulgur is soft. Add pistachios and cook 5 minutes more.
