Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 pound Asparagus
4 tablespoons Vegetable oil
3 tablespoons Vinegar
3 tablespoons Chopped, natural American pistachios
1 tablespoon Minced, fresh chervil or parsley
Snap off lower tough portion of asparagus spears. Arrange in single layer in large skillet. Add boiling water to cover and 1 teaspoon salt. Cover and simmer 15 minutes or until just tender-crisp.
Meanwhile, in small bowl, whisk oil with vinegar, pistachios, chervil and salt and pepper to taste. Drain asparagus. Serve warm with vinaigrette.
