Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 Prepared baked pie shell
1 package Pistachio flavored pudding mix
1 package Dry whip topping mix
1 cup Plain yogurt
1 cup Lemon flavored yogurt
1 cup Milk
1/2 cup American pistachios, finely chopped
Prepare pie shell as desired. Set aside. In a large mixing bowl, combine pistachio flavored pudding mix and whip topping mix. Add cold milk and beat until mixture is thick and of pudding-like texture. Stir in plain yogurt, lemon yogurt and pistachios. Pour into prepared pie shell. Top with sweetened whipped cream. Chill before serving.
