Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
¼ Small watermelon
2 tablespoons Brown sugar
1 tablespoon Apple cider vinegar
2 thin slices Fresh ginger (1/4 teaspoon ground)
1 slice Lemon
½ teaspoon Ground cloves
½ teaspoon Ground cinnamon
4 ounces Natural American pistachios, finely ground
Remove seeds from melon by passing pulp through a food mill or a coarse sieve, leaving as much body to the mixture as possible.
Combine with remaining ingredients in a heavy bottomed pan over medium heat and bring to a boil. Reduce heat to a simmer and cook uncovered for 20 minutes. Cool and use as a marinade for meat, storing refrigerated for up to 24 hours, then cooking as desired. The sauce may be used during cooking, or served as an accompanying sauce.
