Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
4 eggs Whites only
1 teaspoon Vanilla
1/8 teaspoon Cream of Tartar
1 cup Powder sugar
Beat egg whites and vanilla until foamy. Slowly add sugar and cream of tartar. Beat until stiff.
Pipe with plain tip, a 3" base onto parchment paper. Then pipe 2 -3 rings on the outside edge. Bake at 225° F. for several hours until dry.
