Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 pound Halibut steaks
½ cup Celery, sliced
¼ cup Green onions, sliced diagonally
1 tablespoon Oil
1 cup Chopped tomato
¼ teaspoon Thyme, crushed
¼ cup Chopped natural American pistachios
Season halibut with pepper; top each steak with a lemon slice. Put steaks on heatproof plate; place on rack over ½ inch simmering water in skillet. Cover and steam 10 minutes per inch of thickness or until fish flakes easily when tested with a fork. Sauté celery and green onions in oil; add tomato and thyme and heat thoroughly. Add pistachios; mix well. Spoon over halibut steaks.
