Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 cup Butter or margarine, softened
¾ cup Sugar
¼ cup Orange juice
2 cups Flour
½ teaspoon Grated orange peel
Salt to taste (optional)
1 cup Very finely chopped natural American pistachios
Cream butter and sugar; beat in egg and orange juice. Stir in flour, orange peel, salt if used and pistachios. Press dough through cookie press into desired shapes. Bake at 375° F. 8 to 10 minutes or until lightly golden. Do not over bake. Cool on wire rack.
