Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1/2 cup Finely chopped, shelled natural American
1/2 cup each Grated Cheddar cheese and Parmesan cheese
2 sheets Frozen puff pastry dough, thawed*
1/2 cup Melted butter
Combine pistachios and cheeses. Place 1 sheet puff pastry on flat surface. Brush with melted butter; cut in half. Sprinkle pistachio mixture on each half leaving 1-strip along one lengthwise edge. Roll jelly-roll style, from lengthwise edge with pistachio mixture. Roll tightly; seal edge. Cut into 1-inch pieces; place cut-side up on ungreased baking sheet. Repeat with second sheet puff pastry. Lightly brush tops with butter. Bake at 425o F. 12 to 15 minutes or until puffy and lightly browned.
