Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 pound Pearl or small onions
Boiling salted water
2 tablespoons Butter or margarine
4 teaspoons Flour
1 cup Milk
2/3 cup Shredded Cheddar cheese
¼ cup Chopped natural American pistachios, divided
Peel onions; cook in 1-inch boiling salted water about 10 to 15 minutes or until tender. Drain and remove onions to a dish. Melt butter; add flour and blend until smooth. Cook 1 minute. Slowly add milk; cook and stir until thickened. Add cheese; stir until melted. Add onions; heat thoroughly. Stir in 2 tablespoons pistachios. Place in serving dish. Garnish with remaining pistachios.
