Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
½ pound (6 sticks) Mozzarella string cheese
1 Egg, beaten
½ cup Chopped natural American pistachios
Oil for frying
Cut cheese into ¾ x ¾ x 2-inch pieces. Dust cheese with flour; dip in egg and roll in pistachios to coat. Deep-fry in oil heated to 375° F. until golden and cheese is soft. Drain on paper towel. Serve immediately with favorite Marinara sauce for dipping.
