Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
2 large Egg whites
½ cup Sugar
¼ teaspoon Ground cinnamon
1/8 teaspoon Vanilla
¼ teaspoon Lemon juice
½ cup Natural American pistachios, coarsely chopped
In large mixing bowl, beat egg whites until foamy. Gradually add sugar, cinnamon and vanilla; beat until whites form stiff peaks. Gently fold in lemon juice and pistachios. Drop by teaspoonful onto greased baking sheet about 1 inch apart. Bake at 250° F. 35 to 40 minutes or until golden.
