American Pistachio Icebox Cookies

Approximately 6 dozen.

½ cup Butter or margarine, softened
1 cup Sugar
1 teaspoon Vanilla
1 ½ cups Flour
½ teaspoon Baking powder
½ cup Chopped natural American pistachios


Cream butter and sugar. Add vanilla and egg; blend until smooth. Combine flour and baking powder; add to creamed mixture. Stir in pistachios. Shape dough into 2 rolls, about 1 ¼ inches each in diameter. Wrap in waxed paper or plastic wrap; chill thoroughly. Cut into ¼ inch thick slices. Bake at 400° F. 6 to 7 minutes or until barely brown on edges.
