American Pistachio Glazed Bananas Over Ice Cream

4 to 6 servings.

¼ cup Butter or margarine
¼ cup Dark brown sugar, packed
2 teaspoons Lemon juice
1/8 tablespoon Ground cinnamon
¼ cup White Rum (optional)
Bananas, firm-ripe
¼ cup Natural American pistachios, coarsely chopped
Vanilla ice cream


Melt butter in large skillet; blend in brown sugar, lemon juice and cinnamon. Cook and stir until sugar is melted. Cook 1 minute over medium heat; add rum.* Peel bananas; cut in 1/3 to ½ inch diagonal slices. Add bananas and pistachios to hot mixture; stir to coat. Serve over ice cream.
