Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
4 tablespoons Dijon mustard
1 ½ tablespoons Lemon juice
1 cup Light vegetable oil
2-3 tablespoons Cold evaporated milk
2 teaspoons Capers
¼ cup Chopped parsley
¼ cup Chopped chives or scallions
¼ teaspoon Ground black pepper
¼ teaspoon Red pepper flakes
3 ounces Natural American pistachios, finely ground
Combine mustard and lemon juice in bowl and gradually whisk in the oil and the cold evaporated milk in alternating manner. Add remaining ingredients and store refrigerated for up to 10 days. If mixture is too thick, thin with 2-3 tablespoons of water.
