American Pistachio Date Nut Bread

Ingredients: 

1 cup Chopped dates
1 cup Boiling water
1 ¼ cups Flour
½ cup Natural American pistachios, chopped
½ cup Sugar
1 teaspoon Each baking powder and baking soda
¼ teaspoon Salt
2 Eggs, beaten
2 tablespoon Butter or margarine, melted
1 teaspoon Each vanilla and grated orange peel

Instructions: 

Soak dates in water; cool. Combine flour, pistachios, sugar, baking powder, baking soda and salt. Combine date mixture, eggs, butter, vanilla and orange peel; add to flour mixture. Mix only until moistened. Spoon into 8 ½ x 4 ½ x 2 ½-inch greased loaf pan. Bake at 350˚ F. 45 to 50 minutes or until wooden pick inserted near center comes out clean.
