Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 pound Crab meat
½ cup Dry bread crumbs, fine
2 medium Eggs
1 tablespoon Fresh lemon juice
3 tablespoons Mayonnaise
1 tablespoon Parsley, finely chopped
1 tablespoon Cilantro, finely chopped
1 tablespoon Scallions, finely chopped
1 teaspoon Dijon mustard
¼ teaspoon Ground black pepper
4 ounces Natural American pistachios, roasted and
½ cup Fresh lime juice
1 bunch Cilantro, rinsed well
For the Crab Cakes:
Blend all crab cake ingredients together and form into 2” x ½” cakes. Refrigerate until ready to cook. Sauté in heavy-bottomed pan over medium heat in 1-2 tablespoons vegetable oil or unsalted butter, 5 minutes per side. OR: Place cakes on flat oiled baking sheet and bake in preheated 350° oven for 20 minutes, turning over half way through cooking time. Serve with lime-chile sauce.
