Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 cup Butter or margarine, softened
½ cup each Sugar and packed brown sugar
½ teaspoon Brandy flavoring or vanilla
2 cups Flour
1 package Milk chocolate morsels
½ cup Natural American pistachios, chopped
Cream butter and sugars; blend in egg and flavoring. Stir in flour; mix well. Pat into greased 15 x 10 x 1 inch baking pan. Bake at 350° F. 20 to 25 minutes or until lightly browned. Melt chocolate morsels over hot water; carefully spread over hot cookie crust. Sprinkle with pistachios. Cut into 1 x 2 inch bars.
