Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
2 Egg whites, at room temperature
1/2 teaspoon Each vanilla and ground cinnamon
1/2 cup Sugar
1/2 cup Chopped, natural American pistachio
Beat egg whites, vanilla and cinnamon until soft peaks form. Gradually add sugar; beat until stiff peaks form. Fold in pistachios. Drop by teaspoonful onto cookie sheet lined with brown paper. Bake at 325° F., for 20 minutes. Turn oven off and leave meringues in oven until cool.
