American Pistachio Chocolate Mousse

6 servings.

1 package Semi-sweet chocolate morsels
6 tablespoons Unsalted butter or margarine
2 Egg whites, stiffly beaten
1 cup Heavy cream
2 tablespoons Rum (optional)
3/4 cup Shelled, roasted/salted American pistachios, chopped
Sweetened whipped cream (optional)


Melt chocolate and butter together over low heat; cool. Fold egg whites into chocolate mixture. Whip cream with rum until mixture thickens slightly (to consistency of sour cream). Gradually fold whipped cream and rum into chocolate mixture. Fold in 1/2 cup pistachios. Spoon into serving dishes. Top with dollop of sweetened whipped cream and sprinkle with remaining pistachios. Chill 2 hours.
