Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 cup Sugar
1/2 cup Light corn syrup
1 cup Shelled natural American pistachios
2 tablespoons Butter or margarine
1 teaspoon Brandy or vanilla flavoring
1/2 teaspoon Baking soda
1 package Chocolate chips
Combine sugar and corn syrup in 2-quart microwave-safe measuring cup. Micro-cook at HIGH 4 minutes. Stir; micro-cook at HIGH an additional 4 minutes. Stir in pistachios; mix in butter and brandy flavoring. Micro-cook at HIGH 1 minute longer; remove from microwave oven. Stir in baking soda. Spread on aluminum foil-covered sheet. Sprinkle chocolate chips over hot candy and allow to stand for 3 minutes. Spread melted chocolate over candy with knife. Refrigerate until firm. Break into pieces.
