American Pistachio Cheese Spread

Ingredients: 

2 packages (8 ounces each) Cream cheese, softened
2 cups Grated sharp Cheddar cheese
½ cup each Chopped natural American pistachios and chopped green onions or chives
3 tablespoons Brandy or apple juice
1 clove Garlic, minced
1/8 teaspoon Cayenne pepper
Chopped natural American pistachios for garnish

Instructions: 

Combine all ingredients except nuts for garnish. Beat until thoroughly blended*. Spoon into 4 crocks (3 x 2 ½-inch); top with chopped pistachios. Or, refrigerate cheese mixture; when firm shape into 4 balls. Roll balls in chopped pistachios.
Yields 3 ½ cups.
Tip: For smaller portion, combine 1 package (3 ounce) cream cheese, ½ cup grated sharp Cheddar cheese, 2 tablespoons each chopped natural American pistachios and green onions 1 ½ teaspoons brandy or apple juice and dash each garlic powder and cayenne pepper.
