Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 package (14 ounces) firm caramels
2 tablespoons Water
8 Small apples (3 to 4 ounces each)
1 1/2 cups Chopped natural American pistachios
Place caramels and water in large measuring cup; microwave on High 2 minutes, stirring once halfway through cooking time. Wash and dry apples; place wooden stick or skewer in stem end of apples for a handle. Dip apple into warm caramel to coat; scrape off excess. Roll in pistachios to coat bottom half of apple and sprinkle pistachios over top of apple. Place on greased waxed paper; chill until set.
