Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 package (14 ounces) Firm caramels
2 tablespoons Water
8 small Apples (about 3 to 4 oz. each)
Chopped natural American pistachios
Place caramels and water in large measuring cup; micro-cook on HIGH 2 minutes, stirring once halfway through cooking time. Wash and dry apples; place wooden stick or skewer in stems end of apples for handle. Dip apple into warm caramel to coat; scrape off excess. Roll in pistachios to coat entire apple. Place on greased waxed paper; chill until set.
